how to spend a rainy afternoon

there's nothing quite as comforting as spending a rainy afternoon in a warm kitchen with friends.  sunday in seattle was the perfect day to learn how to cook hearty meals through braising ... a simple technique with astounding results.

Braised Pork Shoulder with Sauerkraut

2 T. butter

1 - 3 pound pork shoulder

1 medium onion, sliced

6 cloves of garlic, whole

3 cups sauerkraut

1/2 cup apple cider vinegar

1 cup water or chicken broth

In a dutch oven, melt butter on medium-high heat.  When pan is hot, add pork shoulder and sear on all sides, about 6 minutes per side.  Remove meat and add onions, saute until golden. Add sauerkraut and garlic cloves on top of onions.  Return meat to pot.  Add cider vinegar and water, cover with lid and put in a 325 degree oven for 4 - 6 hours.  Serve with creamy polenta and winter greens..
